Ingredients
- 4 ears Corn Shucked and cleaned
- 1 Cup Mayonnaise
- 1 Cup Cotija cheese (may sub feta or queso fresco)
- Tajín seasoning
- Fresh cilantro for garnish
Instructions
- Bring a pot of water to a rolling boil over high heat
- Place the corn in the pot and boil for 6 minutes
- Remove the corn from the water and allow to cool for 2-3 minutes
- Slather each ear liberally with the mayonnaise
- Sprinkle generously with the cheese
- Season with Tajín seasoning and enjoy!
