  • 4 ears Corn Shucked and cleaned
  • 1 Cup Mayonnaise
  • 1 Cup Cotija cheese (may sub feta or queso fresco)
  • Tajín seasoning
  • Fresh cilantro for garnish


  • Bring a pot of water to a rolling boil over high heat
  • Place the corn in the pot and boil for 6 minutes
  • Remove the corn from the water and allow to cool for 2-3 minutes
  • Slather each ear liberally with the mayonnaise
  • Sprinkle generously with the cheese
  • Season with Tajín seasoning and enjoy!
